LSU Agri-business major Sean Tomlinson has authored an industry white paper on chicory. This work is designed to help southern coffee professionals better understand the history of this ancient root and its impact upon beverages like coffee. “It’s amazing that humans have been drinking chicory water for more than two thousand years”, comments Tomlinson. “The Greeks admired the digestive properties as did the French more recently. It’s the French we have to thank for bringing chicory to the New World as well as mixing it with coffee for a unique flavor profile that we love here in Louisiana.”
